Best Restaurants for Authentic Nice Cuisine
Salad Niçoise, pissaladière (onion pie), daube de boeuf (beef stew), pan bagnat, socca (chickpea pancake), tourte de blette (swiss chard tart) fried zucchini flowers and stuffed vegetables are just a few of the dishes that make Nice cuisine healthy and delightful. La Capelina d’or, an association dedicated to setting standards for Nice cuisine, has worked with local tourist officials to determine which eateries deserve the coveted Cuisine Nissarde label. There must be a respect for traditional recipes (outrages such as potatoes in a salad Niçoise would be disqualifying), good quality ingredients and friendly, knowledgeable service. This year 33 establishments in the region made the cut and may proudly display the Cuisine Nissarde label. Most are sit-down restaurants but snack stands and takeaway places are also included.
