Salad Ni\u00e7oise, pissaladi\u00e8re<\/em> (onion pie), daube de boeuf<\/em> (beef stew), pan bagnat, socca <\/em>(chickpea pancake), tourte de blette<\/em> (swiss chard tart) fried zucchini flowers and stuffed vegetables are just a few of the dishes that make Nice cuisine healthy and delightful. Most French restaurants in and around Nice will serve up at least one traditional Nice dish but where can you sample the best and most authentic Nice cuisine?<\/p>\n

Enter the experts. La Capelina<\/a> d’or<\/a><\/em>, an association dedicated to setting standards for Nice cuisine, has worked with local tourist officials to determine which eateries deserve the coveted Cuisine Nissarde<\/em> label. There must be a respect for traditional recipes (outrages such as potatoes in a salad Ni\u00e7oise would be disqualifying), good quality ingredients and friendly, knowledgeable service. This year 33 establishments in the region made the cut and may proudly display the Cuisine Nissarde<\/em> label. Most are sit-down restaurants but snack stands and takeaway places are also included. And they’re not expensive. You can eat like the Dukes of Savoy<\/a> and spend like a peasant!<\/p>\n
