The master chef is Justin Schmitt whose innovative cuisine won the restaurant a well-deserved Michelin star. Spoiler alert: it did.<\/p>\n<p>The restaurant offers a lunch menu for \u20ac79 including three courses but no beverage.<\/p>\n<p>We began with a glass of the delightfully dry <em>Amour de Deutz<\/em> Champagne.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-875 lazyload\" data-src=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/champagne.jpg\" alt=\"Waiter pouring Champagne\" width=\"650\" height=\"1015\" data-srcset=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/champagne.jpg 650w, https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/champagne-192x300.jpg 192w\" data-sizes=\"(max-width: 650px) 100vw, 650px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/1015;\" \/><\/p>\n<p>Notice those delicate herbal crackers below. Nice start! And swiftly followed by an <em>amuse-bouche<\/em> of dusky, fruity autumn flavors:<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-878 lazyload\" data-src=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/entree-mackerel.jpg\" alt=\"\" width=\"650\" height=\"679\" data-srcset=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/entree-mackerel.jpg 650w, https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/entree-mackerel-287x300.jpg 287w\" data-sizes=\"(max-width: 650px) 100vw, 650px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/679;\" \/><\/p>\n<p>Now, on to the main business.<\/p>\n<p>I began with:<\/p>\n<p>&#8220;<em>Mackerel with vanilla and kohlrabi cabbage with nori seaweed, cabbage milk with buckwheat tea, summer jasmin<\/em>&#8221;<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-882 lazyload\" data-src=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/mackerel-1.jpg\" alt=\"\" width=\"650\" height=\"445\" data-srcset=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/mackerel-1.jpg 650w, https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/mackerel-1-300x205.jpg 300w\" data-sizes=\"(max-width: 650px) 100vw, 650px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/445;\" \/><\/p>\n<p>It may look like an art project but the art was in combining unusual flavors in such a way that the essence of each ingredient was highlighted and &#8220;explained&#8221; in a novel way. Mackerel is a strongly-flavored fish but here the sweetness of the cabbage mollified the oily fish. The jasmine brought the layers together.<\/p>\n<p>My companion ordered a la carte:<\/p>\n<p>&#8220;<em>Roasted octopus with satay Creamy corn with smoked whisky essences<\/em>&#8221;<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-879 lazyload\" data-src=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/entree-poulpe.jpg\" alt=\"\" width=\"650\" height=\"577\" data-srcset=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/entree-poulpe.jpg 650w, https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/entree-poulpe-300x266.jpg 300w\" data-sizes=\"(max-width: 650px) 100vw, 650px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/577;\" \/><\/p>\n<p>Here again the sweetness of the vegetable, corn, and the smokiness of the whisky coaxed the octopus into releasing its most essential self.<\/p>\n<p>Onto the main course!<\/p>\n<p>My choice was:<\/p>\n<p><em>&#8220;Monkfish, liquorice and grilled rice cream, artichoke, Iberian ham&#8221;<\/em><\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-880 lazyload\" data-src=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/starter-mackerel.jpg\" alt=\"\" width=\"650\" height=\"445\" data-srcset=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/starter-mackerel.jpg 650w, https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/starter-mackerel-300x205.jpg 300w\" data-sizes=\"(max-width: 650px) 100vw, 650px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/445;\" \/><\/p>\n<p>It&#8217;s just fish and rice! But transmogrified into a delicate swish of flavor. Apparently the artichoke was subbed out for fresh figs but to good effect. Let&#8217;s not be petty.<\/p>\n<p>I&#8217;m not a bunny eater but my companion was most impressed with:<\/p>\n<p><em>&#8220;Saddle of rabbit stuffed with gamberoni prawn, girolle mushroom with sweet clover, confit thigh with marjoram, rabbit juice infused with nepeta flower&#8221;<\/em><\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-883 lazyload\" data-src=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/rabbit.jpg\" alt=\"\" width=\"650\" height=\"568\" data-srcset=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/rabbit.jpg 650w, https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/rabbit-300x262.jpg 300w\" data-sizes=\"(max-width: 650px) 100vw, 650px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/568;\" \/><\/p>\n<p>This dish was the only foamy sauce I saw, as Chef Schmitt seems to prefer the creamy version. How imaginative to include sweet clover and nepeta flower! What is it? A kind of catnip. I know a couple of felines that would make short work of this construction.<\/p>\n<p>Our other companion ordered a la carte the:<\/p>\n<p><em>&#8220;John Dory in its envelope of stuffed zucchini flower, Lacquered with an extraction of gray shrimp and verbena&#8221;<\/em><\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-884 lazyload\" data-src=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/saint-pierre.jpg\" alt=\"\" width=\"650\" height=\"936\" data-srcset=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/saint-pierre.jpg 650w, https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/saint-pierre-208x300.jpg 208w\" data-sizes=\"(max-width: 650px) 100vw, 650px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/936;\" \/><\/p>\n<p>The tiny bit he allowed me to taste was exquisite. Verbena is plentiful in the region and deserves to infuse more dishes.<\/p>\n<p>And to finish with a flourish my dessert was:<\/p>\n<p><em>&#8220;Lemon and hazelnut from Piemont sphere, Ta\u00efnori chocolate cream and basil sorbet&#8221;<\/em><\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-885 lazyload\" data-src=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/dessert.jpg\" alt=\"\" width=\"650\" height=\"601\" data-srcset=\"https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/dessert.jpg 650w, https:\/\/frenchrivieratraveller.com\/blog\/wp-content\/uploads\/2024\/10\/dessert-300x277.jpg 300w\" data-sizes=\"(max-width: 650px) 100vw, 650px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/601;\" \/><\/p>\n<p>It was so beautifully presented I almost hesitated to eat it. Almost. It was mouthwatering; not too heavy, not cloyingly sweet, just perfect.<\/p>\n<p>As perfect as the rest of the meal. Nearly all the flowers, herbs, roots and fungi are or could be sourced from the region.
